葡萄酒 wine 葡萄的營養 Nutrients in grape

耶穌在被釘十字架之前,設立了聖餐,用餅和杯代表自己的身體和血,而杯裡盛載的是葡萄汁。因為耶穌比喻自己為葡萄樹,祂的信徒為枝子,聖經記載約翰福音155 - 主耶穌說: "我是葡萄樹,你們是枝子。常在我裏面的,我也常在他裏面,這人就多結果子; 因為離了我,你們就不能作甚麼。" 重點是基督教的信徒是從葡萄樹得到生命的營養,是信徒生命的源頭。 

 

日常生活中葡萄、葡萄汁、葡萄酒和提子乾等是我們經常食用的食物。葡萄含大量花青素,而且葡萄皮含有較高濃度的白藜蘆醇作為抗氧化劑,有助保護細胞免受自由基的傷害。葡萄含較多非水溶性纖維有助排便,白藜蘆醇能降低腸道裏有害病原體生長的風險。加拿大有研究人員把餵飼白藜蘆醇小鼠的腸道菌移植到肥胖糖尿小鼠的腸道中;被移植的肥胖小鼠的血糖代謝從而有所改善。 

 

在英國醫學雜誌BMJ發表的一項研究結果表明,某些水果可能會降低2型糖尿病的風險。在這項長達22年的研究中有187,382 醫護人員參加,最後有 6.5%的參與者患有糖尿病。研究指出食用不同原隻水果2型糖尿病的風險不相同,因為果實的纖維、抗氧化劑、其他營養素和植物化學物質含量度不同。食用原隻水果,特別是藍莓、葡萄和蘋果有助降低患2型糖尿病的風險。 

 

歐洲亦有研究把小鼠分組,一組只吃高脂飲食,另一組吃高脂飲食加葡萄果渣。葡萄果渣即是製作葡萄酒剩下的果渣。有吃葡萄果渣一組的血糖控制明顯比只吃高脂飲食組為佳。而腸道中有抗炎作用、影響代謝的羅斯氏(Roseburia)和與建立腸道屏障有關的厚壁 (Erysipelotrichaceae),在葡萄果渣組中明顯增加。可見葡萄對腸道以至整體健康,都有裨益。 

 

有朋友會問葡萄中的含糖量相對較高,對於已經患有糖尿病患者是否適合食用呢? 美國糖尿病協鼓勵糖尿病人適量食用葡萄和其他原隻水果,滿足糖尿病人對甜食欲望的健康方法。
